Beef and Balsamic Salad

From Dorothy McNett's recipes at www.dorothymcnett.com. This is wonderful as a main dish salad any time of the year!

1 pound ground lean beef
2-3 cloves garlic, finely minced
1/2 teaspoon sea salt
1/4 teaspoon freshly ground pepper
1 tablespoon tomato paste or catsup
1-2 teaspoons flour
extra virgin olive oil
balsamic vinegar (at least 8 years aged)
coarse sea salt
lots of fresh greens
1 large apple, diced, or fresh tomatoes, sliced or diced

In large bowl, mix together the beef, garlic, salt, pepper, tomato paste and flour. Shape into oval patties about 1 1/2 inch thick and as large as you wish to present as a serving. With your thumb, poke a small depression in the middle but not all the way through. In a heavy bottomed saute pan or grill pan, heat a few drizzles of olive oil. When hot but not smoking hot, place in the meat patties with the depressed side down. Cook several minutes on the first side, and then flip over and cook until desired doneness on second side, sprinkling about 1/2 teaspoon balsamic into the depression on the top. Sprinkle with a few grains of a coarse sea salt. Arrange lots of greens and apples or tomatoes on individual serving plates, in a circular pattern so that you can then place one of the beef patties in the center. Drizzle with more olive oil and balsamic, as desired. Serve.
