Crabby Creamy Sauce

From Dorothy McNett's recipes at www.dorothymcnett.com. If not using the crab, substitute cooked veggies or just simply serve as a great cheese sauce for vegetables, pasta, rice, etc.

1/4 cup olive oil (or unsalted butter)
1/4 cup unbleached all purpose flour
1/2 teaspoon fine sea salt
1/4 teaspoon freshly ground pepper
cayenne pepper or hot sauce, as desired
2 cups milk or half and half
1/2 cup grated Cheddar or Jack cheese
1 - 1 1/2 cups diced cooked crab meat

cooked pasta or rice or vegetables, etc......

In glass or ceramic batter bowl combine oil, flour, salt, pepper and cayenne. Cook in microwave 30 seconds. Whisk in milk or half and half. Cook another 2 minutes. Whisk well. Cook another 1-2 minutes more and whisk well. It should be thickened but if not. repeat as needed to thicken sauce nicely. Add the cheese and stir with a spatula to melt, adding 30-60 seconds heating time as needed. Add the crab. Do not put back into the microwave once the crab has been added, so make sure the cheese has totally melted before adding the crab. Serve with omelettes, pasta, rice, etc.
