1 cup unbleached all purpose flour
Preheat oven to 425 degrees. Prepare muffin pans, using paper liners if desired. Whisk together the dry ingredients. In another bowl, toss about 1 tablespoon of the dry ingredients with the blueberries and set aside. In yet another bowl, whisk the oil, milk, eggs and vanilla together very well. Add liquid mixture to dry ingredients and stir until moistened, adding the blueberries to just blend in nicely. Spoon mixture into muffin cups. Bake 15-20 minutes till golden brown. Let stand about 5 minutes before eating!
