Easy Appetizer

From Dorothy McNett's recipes at www.dorothymcnett.com. This is just one way to use some good quality ready-made items and turn it into a fabulous appetizer. Clean out that refrigerator, find a jar of spicy jam, etc. Any flavorful jam or chutney would be great. Pair this with Champagne, Chablis or Zinfandel, for instance.

about 1/2 cup crushed good quality crackers
droplets of extra virgin olive oil
wedge of good soft brie
caramelized onion jam, or other savory tapenade
(OR, use avocado and tomato pureed together like a chilled gazpacho soup of sorts!)
crackers or bread slices for serving
apple or pear slices

Crush the crackers, using a rolling pin or the food processor. Drizzle in just a bit of oil to help hold the crumbs together but not to make it oily. Sprinkle into bottom of serving platter or little dishes. Arrange the brie over the cracker crumbs and cover the cheese with the onion jam or tapenade. Serve with crackers or bread slices, apple or pear slices.
