Ginger People Chicken

From Dorothy McNett's Recipe Book at www.dorothymcnett.com. Cut the chicken into little strips, cook as directed and serve on sesame crackers for a great appetizer. Serve with a dry white wine, such as the Greek white from Santorini.

skinned and boned chicken breast
olive oil

a good bottled marinade, such as:
Ginger Lime Marinade from Ginger People
mayonnaise or tahini
crackers

Cut the chicken into thin short strips. Heat saute pan for 30 seconds and then add chicken pieces. Cook and stir over medium heat several minutes, or until chicken is done. Stir in a few tablespoons of your choice of marinade. Heat thoroughly. Spread sesame crackers with a tiny bit of mayonnaise or tahini. Top with a few pieces of chicken and serve.
