Crepes with Whole Wheat Flour

From Dorothy McNett's Recipe Book at Fill these with some smoked salmon and softened brie!

2 eggs
1 cup milk
1/4 teaspoon fine sea salt or herbed sea salt
1 tablespoon extra virgin olive oil
3/4 cup whole wheat or buckwheat flour
filling, as desired (smoked salmon and soft brie is great!)

In batter bowl whisk the eggs very well, adding the milk, salt and oil. Whisk in flour to make a thin batter. (Or use your electric mixer or a blender) Allow to stand about 10 - 30 minutes before cooking. Follow the directions for Crepes Batter for the cooking, adding a bit more water or flour as needed. Fill as desired.
