Chicken with Mango...Cuban style

From Dorothy McNett's recipes This is great served over rice, or alongside of beans, or both.

2 tablespoons rum
2 tablespoons soy sauce
4 tablespoons lime juice
2-3 pounds boneless chicken thighs

2 tablespoons butter
2 tablespoons olive oil
1 small onion, chopped
2-3 cloves garlic, minced

1 cup ripe mango pieces
2 tablespoons raw sugar
1/8 teaspoon dried red pepper (ancho)
1/2 teaspoon salt
freshly ground pepper
2-3 tablespoons fresh cilantro or parsley, snipped

Combine rum, soy sauce and lime juice in bowl. Cut the chicken into serving sized chunks and marinate at least 4 hours in refrigerator. When ready to cook, heat the butter and olive oil in heavy bottomed skillet or saute pan and then add the onion and garlic. Cook and stir several minutes to soften but not to brown them. Remove chicken from marinade, reserving the marinade. Add chicken to pan and cook several minutes to brown chicken on all sides. Add the mango, sugar, ancho, salt and pepper. Cover and gently simmer about 8-10 minutes on medium low heat adding a bit more of the marinade if needed. Garnish with cilantro or parsley, or both, and serve.
