Chicken with Mango
From Dorothy McNett's Recipe Book at www.dorothymcnett.com. This is great served over rice, or alongside of beans, or both.
2 tablespoons rum
Combine rum, soy sauce and lime juice in bowl. Cut the chicken into serving sized chunks and marinate at least 4 hours in refrigerator. When ready to cook, heat the butter and olive oil in heavy bottomed skillet or saute pan and then add the onion and garlic. Cook and stir several minutes to soften but not to brown them. Remove chicken from marinade, reserving the marinade. Add chicken to pan and cook several minutes to brown chicken on all sides. Add the mango, sugar, ancho, salt and pepper. Cover and gently simmer about 8-10 minutes on medium low heat adding a bit more of the marinade if needed. Garnish with cilantro and serve.
