Annatto Oil

From Dorothy McNett's Recipe Book at Any good quality vegetable oil can be used. I use olive oil or grapeseed oil.

1/4 cup oil
2 tablespoons annatto (achiote) seeds

Warm the oil in skillet and stir in the seeds. Allow to cool, strain and discard the seeds. Or, stir powdered annatto into oil and use in the same way.
