Smoked Salmon with Fruit Salsa

1 cup diced cantalope
1 cup diced pineapple
1 apple, diced
1 kiwi, diced
1 small red or green bell pepper, diced
1/2 to 1 jalapeno, diced
1/3 cup white wine vinegar
2 tablespoons extra virgin olive oil
2-3 sprigs fresh cilantro, snipped
1/2 teaspoon semi-coarse sea salt

salmon steaks smoked in stove top smoker, or smoker bag
baby greens

In a bowl combine fruits, peppers, vinegar, oil, cilantro and salt. Toss well. Set aside for flavors to blend while you grill or smoke the salmon. Serve salmon on a bed of baby greens and fruit salsa on the side.
