New Zealand Kiwi and Cheese Dice / Salad

1 - 2 kiwis
small wedge triple creme cheese, such as Saint Andre
pinch of sea salt, if desired
1/2 cup or more of cooked chilled baby shrimp
fresh baby greens
2-3 tablespoons extra virgin olive oil

Peel and dice the kiwi. Cut the cheese into similiar sized shapes. Toss together gently with the baby shrimp and serve alongside a grilled chicken breast or beef steak. It acts as a beautiful edible garnish! Or, serve as a salad along with lots of baby greens drizzled with extra virgin olive oil.
