Pepper Pasta

From Dorothy McNett's Recipe Book at www.dorothymcnett.com. Cook up any interesting pasta and then serve with stir-fried vegetables for a great main dish that is easy and creative.

1 pkg interesting pasta...choose something different in shape
1-2 teaspoons olive oil

1 onion, sliced
2-3 cloves garlic, slivered
1-2 sweet potatoes, sliced
1 each red, green and yellow bell pepper
2-3 tablespoons olive oil
sea salt
freshly ground peppercorns
pasta sauce or salad dressing, as desired
fresh baby greens

First cook the pasta as directed on package. Drain and place into a beautiful bowl. Sprinkle with olive oil, toss, and set aside. Sliver or slice the vegetables, as desired. Heat oil in a stir-fry or saute pan and then gently cook and stir the vegetables until they are tender, but still crisp. I like to start with the potatoes, garlic and onion to get them cooked up a bit, and then add the peppers. Season to taste with salt and pepper, stir in some prepared pasta sauce or salad dressing. Pour this over the cooked pasta, and then serve with salad greens on the side.
