Steamin' Greens and Roasted Red Pepper Salad

From Dorothy McNett's Recipe Book at using a bag of Salad Savoy Steamin' Greens. This is one dynamite salad!

2 - 3 red bell peppers, roasted and torn into slivers
4 tablespoons extra virgin olive oil
1 bag (16 oz) Steamin' Greens, diced or torn into pieces
1/2 medium purple onion, thinly sliced and diced
3-4 cloves garlic, slivered

2 tablespoons soy sauce
2 tablespoons white vinegar
2 tablespoons lemon or lime juice
4 tablespoons crystalline brown sugar
pinch of cayenne or other hot pepper, as desired
1/2 teaspoon fine sea salt

snipped fresh cilantro
salted peanuts or sugared pistachios

Roast peppers (as directed in recipe for Roasting Peppers) and marinate in olive oil. In beautiful bowl, combine roasted peppers, Steamin' Greens, onion and garlic. In measuring cup whisk together soy sauce, vinegar, juice, sugar, cayenne and salt. Pour over vegetables, toss well and add cilantro and nuts of choice.
