Baked Chestnuts

From Dorothy McNett's recipes at www.dorothymcnett.com. This is a great side dish to serve with turkey and dressing. Cook it in the oven while the turkey is cooking, or do them ahead. This can be served hot, warm, or cold! Roast your own chestnuts (see recipe) or use a jar of Roasted Chestnuts or a package of Roasted Dried Chestnuts...

2 cups roasted and shelled chestnuts
1 1/2 cups vegetable, chicken or turkey stock
1 tablespoon butter or olive oil
1 tablespoon unbleached all purpose flour
snipped fresh herbs, or slivered toasted garlic bits as desired

Place chestnuts in casserole, pour the stock over. Cover and bake at 350 degrees for 1 hour. Or, place chestnuts and stock in saucepan, bring to a boil and reduce to simmer and gently simmer for about 20 minutes. Either way, when done remove chestnuts to a serving bowl. In frypan, heat butter or oil whisking in the flour and then whisking in the hot broth. Cook 1-2 minutes to make a sauce, pour over the chestnuts and serve with the dressing from the turkey, garnished with some snipped herbs or crispy roasted garlic bits.
