Cheese Salad

From Dorothy McNett's recipes at Use any really good quality semi-firm cheese, especially Comte, Gruyere, aged Cheddar, etc.

1/4 cup Chardonnay or other white wine
3/4 - 1 pound Swiss or cheddar cheese, cut into julienne strips
1 shallot, peeled and chopped
1-2 sprigs fresh parsley, finely diced
1 tablespoon red wine vinegar
1/4 teaspoon raw sugar or honey
1 tablespoon Dijon mustard
1/4 cup extra virgin olive oil
sea salt
freshly ground peppercorns
baby greens with arugula or other "flavorful" leaves

Pour wine into a deep bowl. Julienne the cheese and marinate the strips in the wine for about 30 minutes at room temperature. In meantime in measuring cup whisk the shallot, parsley, vinegar, sugar, mustard, olive oil, salt and pepper. When ready to serve, pour the dressing over the cheese mixture and then toss into the greens. Makes about 4-5 servings.
