Use any really good quality semi-firm cheese, especially Comte, Gruyere, aged Cheddar, etc. 1/4 cup Chardonnay or other white wine Pour wine into a deep bowl. Julienne the cheese and marinate the strips in the wine for about 30 minutes at room temperature. In meantime in measuring cup whisk the shallot, parsley, vinegar, sugar, mustard, olive oil, salt and pepper.
