Try this one, served in your nice stemmed martini glasses. 1 cup white sugar Prepare a baking sheet by buttering it lightly or simply cover it with a silicone mat. Set aside. In batter bowl, microwave sugar and syrup 2 minutes. Stir. Microwave another 2 minutes. Stir in peanuts, and microwave 3-4 minutes more until light amber brown. Add butter and vanilla, and microwave 1 minute more, depending on how it looks. Peanuts will be lightly brown and the syrup will be thick, gooey, and dark amber brown. Add baking soda, stir until light and foamy. Quickly pour onto lightly buttered baking sheet or a silicone mat, and using a potato half, spread the brittle into a thin layer. When cool, break into small pieces. Wash and slice the berries as necessary, and slice or dice the bananas. Toss together gently and spoon into beautiful serving dishes.
