Grilled Mixed Burgers with Pesto Sauce

freshly made pesto sauce (see recipe)

1/2 pound lean ground beef, more or less
1/2 pound ground turkey, more or less
1/2 teaspoon sea salt
few grindings of peppercorns
1/4 - 1/2 teaspoon smoked paprika

slices of hearty wheat bread or buns
fresh baby greens

First make the pesto sauce and set aside for the flavors to blend nicely. Using separate bowls, place beef in one and turkey in the other. Season each with salt, pepper and paprika and mix together. Shape the patties, using some beef for one side and some turkey for the other so that they stay together but also stay a bit individual. Grill over hot coals or on a stove top grill until done to your liking. To serve, place bread slices on a beautiful platter, spread each with a bit of the pesto sauce, arrange a few leaves over the pesto, add a meat patty and finally drizzle with a bit more pesto. Serve immediately as an open faced sandwich or cut into smaller pieces for appetizers. The remaining pesto sauce can be kept in refrigerator 1-2 days for a dip or a pasta sauce.
