Ham Pinwheel

From Dorothy McNett's recipes at www.dorothymcnett.com Ham in many shapes, sizes and special recipes has been often served in the White House for state dinners, etc. Southern and Midwestern influence no doubt!

1 cured (precooked) bullet shaped boneless ham
2-3 tablespoons flavorful mustard
spinach leaves
chives, snipped
parsley, snipped

Preheat oven to 425 degrees. With your very sharp and well maintained knife, butterfly the ham so that you have a fairly flat rectangle. Spread with the mustard. Arrange spinach leaves over all and snip on the chives and parsley. Roll up and tie with kitchen twine. Place on a silicone lined baking sheet with sides. Calculate cooking time, using 18-20 minutes per pound of ham as your guide. Place ham in oven, reduce the heat to 350 degrees. Ham should register about 160-165 degrees when done. Allow to stand about 10 minutes on cutting board before slicing.
