Strawberry Fantasy

From Dorothy McNett's recipes at www.dorothymcnett.com. This is a blending of so many wonderful flavors for a perfect dessert. It can be as simple as a delectable finger food, or as elegant as a fruit dessert served in your finest stemware. Make this only when FRESH LOCAL sweet strawberries are in season. These were presented to our elated audience at a filming of our Central California Cooking with Dorothy McNett television show a few years ago!

fesh LOCAL strawberries
caramel candies (Lula's of Monterey is perfect, as they are soft yet chewy)
1/2 - 3/4 cup semi sweet chocolate chips (I am using Guittard's)
black sea salt crystals

Wash and thoroughly dry each strawberry. Using a strawberry huller, remove the stem from each berry. With a sharp knife, cut and shape caramel candies into a fan shape. Tuck into the stem end of each berry. In a 2 cup glass measuring cup, melt the chocolate in the microwave oven, usually takes about 30-45 seconds or until chocolate has melted nicely. Dip each strawberry into chocolate and place on waxed paper or silicone lined baking sheet. Sprinkle each with a few granules of black sea salt. Allow to stand about 30 minutes or more for the chocolate to harden. OR, dice the strawberries, cut up the caramels into small pieces and toss together. Spoon into stemmed serving glasses such as martini glasses. Melt the chocolate and drizzle a bit over each serving. Sprinkle with salt, and allow to stand about 20-30 minutes. Serve!
