Mocha Fudge Pie with Fresh Peaches

From Dorothy McNett's recipes at This crustless dessert is called pie simply because it can be sliced into wedges. Dollop a bit of chocolate sauce or even softened ice cream over the serving plates and then place the wedge on top garnished with fresh fruit of the season. Chocolate and peaches are great together!

1/2 cup unsalted butter, softened
1 cup raw sugar
2 eggs
1/2 cup all purpose unbleached flour
1/4 teaspoon sea salt
1/3 cup unsweetened cocoa powder
2 tablespoons instant espresso powder
1 teaspoon real vanilla extract or vanilla paste
1/2 cup chopped nuts, as desired

drops of olive oil for the baking pan

sliced fresh peaches, or other fruits of choice
chocolate sauce, or softened ice cream, as desired for garnish

Preheat oven to 325 degrees. Have butter at room temperature, or place cold butter in glass or ceramic batter bowl and microwave about 30 seconds to soften. Add sugar and using electric mixer, beat until creamy. Add eggs, flour, salt, cocoa, coffee powder and vanilla and beat well. Stir in nuts. Lightly oil 8 or 9 inch glass or ceramic pie pan with olive oil and then pour mixture in. Bake about 30 minutes. Cool, slice and serve with peaches. Garnish with dollops of chocolate sauce or softened ice cream. It is especially beautiful to spread some of the sauce on the individual plates and then place the wedge of "pie" over the sauce and arrange the sliced peaches over all.
