Lemon Maple Matcha Crispies

From Dorothy McNett's recipes at www.dorothymcnett.com. Vary the choices of crispy cereals for varieties in textures each time you make this.

1/4 cup raw sugar
1/2 cup maple syrup
1 cup peanut butter
zest of 1 large lemon
juice of lemon (at least 1/4 cup, maybe a bit more even)
2 tablespoons sweet matcha powder
3 cups crunchy cereal (Kashi 7 whole Grain Flakes)

Combine sugar, syrup, peanut butter and zest in a glass or ceramic batter bowl. Cook in microwave 2 minutes. Stir, cook another 1-2 minutes or until mixture has started to boil and the peanut butter can be mixed in nicely. Add lemon juice, matcha powder and cereal and when mixed, spread and press onto a parchment paper or silicone lined baking sheet either into a rectangular shape or a circle. When cool, slice into pieces. DO NOT CUT WITH A SHARP KNIFE on your silicone mat. Use a plastic or table knife, or the "bash and chop" also known as a dough docker.
