Tej (Honey Wine)

From Dorothy McNett's recipes at www.dorothymcnett.com. This recipe is a replication of fermented white wine of Ethiopia which would traditionally be made from raw honey and hops. I present this with our meal as part of the tradition!

2 cups white wine, such as Riesling
2 cups water
1/4 cup honey

Combine ingredients. Chill thoroughly.
