Lasagna

From Dorothy McNett's Recipe Book at www.dorothymcnett.com. This is a basic recipe, each time you make it you could select a different marinara sauce.

2-3 cloves garlic, minced
1 teaspoon dried basil, or 3-4 fresh leaves snipped
1-1/2 teaspoons dried oregano
1 jar marinara sauce or your own favorite recipe, about 3 cups
1 pound ricotta cheese
1 egg
2 tablespoons parsley, chopped
1 (14 oz.) pkg. lasagna noodles (I really like Barilla)
3/4 to 1 pound lean ground beef (or turkey or chicken)
1 (14 oz.) can chopped Italian tomatoes
salt and pepper to taste
8 oz. thinly sliced or grated mozzarella cheese

1/4 cup Parmigiano-Reggiano cheese, freshly grated

Preheat oven to 375 degrees. Add garlic, basil, and oregano to marinara sauce. In batter bowl, combine ricotta, egg, and parsley. In a 9 by 13 baking dish spread about 1/2 cup of marinara sauce. Place 3-4 noodles over sauce. (They can overlap a little, and you can break some to make them fit in your particular baking dish. A package of Barilla noodles has 16 sheets, and you will be making 3 layers so you will have plenty to work with). Pour 1 cup sauce over noodles. Break up meat into small pieces and put half of the meat over the sauce. Place half of the tomatoes over the meat. Place 3-4 noodles over the top. Spread all of the ricotta cheese mixture over the noodles. Distribute remaining meat over cheese. Salt and pepper to taste. Pour one cup sauce over all. Add remaining chopped tomatoes. Arrange the sliced or grated mozzarella over the tomatoes, and then top with 3-4 or more noodles. Pour remaining sauce over everything. Cover dish with a flat cookie sheet. Bake covered 50 minutes. Remove cover, and sprinkle with grated Parmigiano. Return to oven, uncovered, for about 10 minutes to brown just a little. Remove from oven and allow to stand about 10-15 minutes before serving.

It goes something like this: 1/2 cup marinara sauce, noodles, 1 cup sauce, 1/2 of the meat, 1/2 of the tomatoes, noodles, all of the ricotta cheese, rest of the meat, salt and pepper, 1 cup sauce and rest of tomatoes, mozzarella, noodles, remaining sauce.
