Baking Powder Biscuits

From Dorothy McNett's Recipe Book at www.dorothymcnett.com Serve with smoked salmon and fresh tomatoes!

2 cups unbleached all purpose flour
4 teaspoons baking powder
1/2 teaspoon cream of tartar
3/4 teaspoon sea salt
2 teaspoons raw sugar
1/2 cup cold unsalted butter
2/3 cup milk

thin slices smoked salmon, if desired
thin slices tomatoes, if desired

Preheat oven to 425 degrees. In food processor with steel chopping blade in place, whirl flour, baking powder, cream of tartar, salt and sugar to mix well. (Or whisk together in a batter bowl) Cut in the butter until it resembles the size of large peas. Add the milk and blend only until mixture clumps into a ball. Dump out onto a lightly floured surface and hand knead a few times. Roll out to about 1/2 inch thickness and cut into desired biscuit shapes. Arrange on a silicone lined baking sheet. Bake about 12 minutes.
