Green Salad with Fresh Fruit Dressing

From Dorothy McNett's recipes at www.dorothymcnett.com. Add cooked baby shrimp to this salad if desired! Or diced smoked salmon, etc......

4-5 juicy ripe Blenheim apricots, pitted (or use 1/2 cup pitted fresh cherries of the season)
2-3 tablespoons chopped fresh basil
1/4 cup white wine vinegar (or white balsamic)
2 tablespoons raw sugar
1/4 - 1/2 teaspoon semi-coarse sea salt
1/4 teaspoon freshly ground peppercorns
1/2 cup extra virgin olive oil

fresh greens, washed and spun dry
cooked baby shrimp or salmon, etc. as desired

In food processor with steel chopping blade in place, whirl the apricots or cherries with the basil, and then add vinegar, sugar, salt, pepper and olive oil to make a thickened dressing. Pile greens into a beautiful salad bowl, drizzle on the dressing, toss and serve, adding the baby shrimp or salmon as desired, or not!
