Persian Salad

From Dorothy McNett's recipes at This is very delicious simple salad with all of the natural foods and flavors typical of a salad from Persia and Iran.

1 head iceberg lettuce, or other crisp salad greens
sea salt
3 - 6 fresh mint leaves
1 tablespoon extra virgin olive oil
1/4 cup of black olives, finely chopped
1-2 tablespoons freshly squeezed lemon juice

Julienne the lettuce and sprinkle salt all over it, set aside for 30 minutes. Then rinse with cold water and pat dry with towels, or dry in a salad spinner. Cut the mint leaves into very thin strips and mix well with the olive oil. Toss everything together and serve!
