Apple and Pear Dessert

3/4 cup unbleached all purpose flour
1/2 cup raw sugar
1 teaspoon baking powder
1/2 teaspoon nutmeg
1/4 teaspoon freshly ground pepper
1/2 teaspoon sea salt
1 1/2 cups coarsely chopped apples and pears (any combination!)
1/2 cup coarsely chopped walnuts
6-8 or more caramel candies, cut in half
1/2 cup apple juice or milk

3/4 cup raw sugar
1/4 cup extra virgin olive oil or butter
1 teaspoon vanilla extract
3/4 cup sweet dessert wine such as muscat or sweet sherry, or water

Preheat oven to 375 degrees. In batter bowl, whisk the flour, sugar, baking powder, nutmeg, pepper and salt. With spoon or spatula, blend in the apples, nuts, caramels and juice. Spread into a buttered 1 1/2 quart casserole. In another batter bowl, combine the sugar, oil, vanilla and sweet wine. Cook in microwave for 1-2 minutes, or until sugar has dessolved. Pour over batter. Bake 40-45 minutes. Serve warm with fresh fruit or ice cream, if desired.
