Caramel and Apple Dessert

From Dorothy McNett's Recipe Book at www.dorothymcnett.com. To make this extra special, I am adding a few caramels from Lula's of Monterey candies.

3/4 cup unbleached all purpose flour
1/2 cup crystalline brown sugar
1 teaspoon baking powder
1/2 teaspoon nutmeg
1/4 teaspoon freshly ground white pepper
1/4 teaspoon fine sea salt
1 1/2 cups coarsely chopped apples (or pears are great, too!)
1/2 cup coarsely chopped walnuts
6-8 Lula's caramels, cut in half
1/2 cup apple juice or milk

3/4 cup crystalline brown sugar
1/4 cup extra virgin olive oil or butter
1 teaspoon vanilla extract
3/4 cup water (or sweet dessert wine such as muscat os sweet sherry)

Preheat oven to 375 degrees. In batter bowl, whisk the flour, sugar, baking powder, nutmeg, pepper and salt. With spoon or spatula, blend in the apples, nuts, caramels and juice. Spread into a buttered 1 1/2 quart casserole. In another batter bowl, combine the sugar, oil, vanilla and water. Microwave on high for 1-2 minutes, or until sugar has dessolved. Pour over batter. Bake 40-45 minutes. Serve warm with fresh fruit or ice cream, if desired.
