Smoked cooked salmon slicess are fabulous this way! slices of ciabatta bread, sliced about 3/4 inch thick (Italian French bread) Simply slice the bread, spread each slice with about 1/2 teaspoon of the quince paste so that it covers the entire surface and goes down into the holes of the bread a bit. Arrange pieces of the salmon or ham (may have to cut or tear the ham slices so that they will fit neatly on the bread) over the quince paste, arrange slices of fresh mozarella and drizzle with just a few drops of olive oil. Cut each slice into 3 pieces and serve as an appetizer. You can warm them briefly in a skillet if desired, delicious hot, warm, or cold! Recipe created 2009-08-26. © 1996-2013 Dorothy McNett.
