Ciabatta Appetizers

From Dorothy McNett's recipes at It is the ingredients! Make sure they are the best! Smoked cooked salmon slicess are fabulous this way!

slices of ciabatta bread, sliced about 3/4 inch thick (Italian French bread)
quince paste jam
slices of smoked salmon or ham or salami, etc.
slices of fresh mozarella cheese
drizzles of extra virgin olive oil

Simply slice the bread, spread each slice with about 1/2 teaspoon of the quince paste so that it covers the entire surface and goes down into the holes of the bread a bit. Arrange pieces of the salmon or ham (may have to cut or tear the ham slices so that they will fit neatly on the bread) over the quince paste, arrange slices of fresh mozarella and drizzle with just a few drops of olive oil. Cut each slice into 3 pieces and serve as an appetizer. You can warm them briefly in a skillet if desired, delicious hot, warm, or cold!
