Brownies Better Than Ever!

Thanks Linda McFeely and Michael Eakins for the use of your home and special kitchen! Feel free to add some hemp seeds, cocoa nibs, dried cranberries, etc. to vary these instead of the nuts, keeping the additions to about 1/2 cup total.

1/2 cup unsalted butter
2 squares (2 oz.) semi-sweet chocolate

1 cup raw sugar
2 eggs
3/4 cup all-purpose unbleached flour
1/2 teaspoon real vanilla or vanilla bean paste
1/2 cup chopped nuts (spiced pecans, etc.!)

Preheat oven to 350 degrees. Brush some olive oil over the bottom and slightly up the sides of a 8 or 9 inch square baking dish or pan. Melt butter and chocolate in batter bowl in microwave for 1 minute, adding 30 seconds if needed, or until melted. Stir in remaining ingredients. Spread batter in the oiled pan. Bake for 30-40 minutes, or until done. Allow to cool on rack 30 minutes before slicing.

OR, if desired, bake these in your microwave oven instead by spreading batter in glass cake or quiche dish. Microwave, uncovered, 5 to 6 minutes or until the top looks set and not too moist. Allow to stand 5 minutes. Cut into bars or squares. They will be softer than those baked conventionally. I like to serve these on a puddle of good quality chocolate sauce with a chocolate covered strawberry or a dried apricot rose on the side. And sometimes, we get to have these with chocolate covered spinach chips!
