Lettuce Salad with Avocado Dressing

1 soft ripe avocado
2 cloves garlic, diced
zest of the orange
1/2 cup orange juice
1 tablespoon honey or brown sugar
1/2 teaspoon fine sea salt
freshly ground pepper

salad greens, as desired
fresh red ripe tomato, diced
spiced pecans, if desired (Jeffrey's)

Slice avocado in half, remove the pit and peel. Mash it well, adding chopped garlic, zest, orange juice, honey, salt and pepper. (I like to use the food processor with the steel chopping blade, or a blender.) Blend to a creamy consistency, adding more juice or sweet white wine if necessary. Arrange salad greens, diced tomatoes, and spiced pecans in a beautiful bowl and toss in the dressing. Serve!
