Zucchini Dip or Dressing
From Dorothy McNett's Recipe Book at www.dorothymcnett.com. Serve this wonderful dip with assorted crackers and fresh raw vegetable sticks.
1 medium zucchini (1 1/2 cups shredded)
Shred the zucchini, using a vegetable grater, mandolin, or food processor. Set aside. Finely chop the shallots, green pepper and garlic. Combine in glass or ceramic batter bowl along with the butter or oil. Cover. Microwave 2 minutes. Stir in the raw zucchini, mayonnaise, salt, pepper and Worcestershire. Serve warm, or chill several hours to blend flavors even more. Serve in a beautiful glass dish and arrange crackers and vegetable pieces around it attractively.
