Zucchini Dip or Dressing

From Dorothy McNett's recipes at www.dorothymcnett.com. Serve this wonderful dip with assorted crackers and fresh raw vegetable sticks.

1 medium zucchini (1 1/2 cups shredded)
1 small onion
1/2 sweet green bell pepper
2-3 cloves garlic
1 tablespoon unsalted butter or olive oil
3/4 cup good quality mayonnaise
3/4 teaspoon fine sea salt
freshly ground pepper
1 teaspoon Worcestershire sauce

Shred the zucchini, using a vegetable grater, mandolin, or food processor. Set aside. Finely chop the onion, green pepper and garlic. Combine in glass or ceramic batter bowl along with the butter or oil. Cook in microwave 2 minutes, or saute in fry pan about 3 minutes. Stir in the raw zucchini, mayonnaise, salt, pepper and Worcestershire. Serve warm, or chill several hours to blend flavors even more. Serve in a beautiful glass dish and arrange crackers and vegetable pieces around it attractively.
