From Dorothy McNett's Recipe Book at www.dorothymcnett.com. Dice or grind chicken, using a variety of white and dark meat. Make patties, cook, and serve with best quality bread buns or corn tortillas along with lettuce, sliced tomatoes, and dressings as desired.
1 pound freshly diced or ground chicken
Combine chicken, seasonings, seeds and bran. Shape into flat patties and roll each in a little oat bran. Heat griddle or saute pan with 1-2 tablespoons olive oil. Cook about 3 minutes, turn over and continue to cook until done and nicely browned.
