Chicken Burgers

From Dorothy McNett's Recipe Book at Dice or grind chicken, using a variety of white and dark meat. Make patties, cook, and serve with best quality bread buns or corn tortillas along with lettuce, sliced tomatoes, and dressings as desired.

1 pound freshly diced or ground chicken
3 tablespoons snipped fresh parsley
2-3 green onions, finely diced
1-2 cloves garlic, finely diced
1/2 teaspoon dried sage
1/2 teaspoon dried marjoram
1/2 teaspoon unrefined sea salt
freshly ground pepper
1/4 teaspoon paprika (try using the smoked paprika for a great flavor!)
2 tablespoons hemp or flax seeds
1/4 cup oat bran, plus a bit more for coating the patties

whole wheat or other desired bread slices or buns, or tortillas, pita bread, etc.
mayonnaise or other sandwich spreads, as desired
freshly sliced tomatoes

Combine chicken, seasonings, seeds and bran. Shape into flat patties and roll each in a little oat bran. Heat griddle or saute pan with 1-2 tablespoons olive oil. Cook about 3 minutes, turn over and continue to cook until done and nicely browned.
