Olive and Elderberry Salad

From Dorothy McNett's Recipe Book at www.dorothymcnett.com. Natural elderberry concentrate is available in natural food stores and makes a fabulous "cough medicine" as well as a delicious salad dressing when blended with extra virgin olive oil.

1 cup olives, pitted and sliced (so many kinds to choose from!)
1 roasted red or green bell pepper, chopped
1 cup hazelnuts, toasted and chopped
2-3 cups coarsely chopped Italian parsley, or baby greens
1/4 cup extra virgin olive oil
2-3 tablespoons elderberry concentrate
2 cloves garlic, finely minced
1/4 - 1/2 teaspoon unrefined sea salt
freshly ground pepper

In beautiful salad bowl, combine olives, pepper, hazelnuts and greens. In measuring cup, whisk the oil, elderberry concentrate, garlic, salt and pepper. Drizzle over salad, toss and serve.
