Sweet Baby Peppers

From Dorothy McNett's recipes at www.dorothymcnett.com. A carton of about 12-14 mini sweet peppers in colors of red and yellow are available at most markets. Use for an appetizer, or just eat as a snack, or as a vegetable side dish. This is incredible when served with slices of wonderful cheese and wines!

1 package fresh sweet mini peppers
a few drops of extra virgin olive oil
sprinkles of sea salt

Preheat oven to 350 degrees. Wash the peppers, but do not remove stems or peelings. Place on a silicone lined baking sheet, sprinkle on a few drops of olive oil. Bake 25-30 minutes, or until they are just beginning to brown and are getting soft. Allow to cool at room temperature. Serve, each person removing the stems as they eat these delicious morsels, sprinkling with sea salt as desired.
