Smoked Salmon with Cactus Pear Drizzle
From Dorothy McNett's Recipe Book at www.dorothymcnett.com. This recipe features a wonderful Cactus Pear Vinaigrette by Andy Boy of Salinas, Ca. I smoke the salmon in a wonderful stove top smoker by Cameron's.
1-2 fresh salmon steaks or fillet
Pat salmon with olive oil and sprinkle with your choice of herbs, fresh or dried, and the pepper. Place in the smoker and cook over medium heat for about 20-25 minutes, or until salmon is done. Sprinkle with some black sea salt. Arrange over a bed of fresh greens, gently drizzle with the vinaigrette and serve with thin slices of bread. YUM!
