Smoked Salmon with Cactus Pear Drizzle

From Dorothy McNett's Recipe Book at This recipe features a wonderful Cactus Pear Vinaigrette by Andy Boy of Salinas, Ca. I smoke the salmon in a wonderful stove top smoker by Cameron's.

1-2 fresh salmon steaks or fillet
1-2 teaspoons extra virgin olive oil
1/2 - 1 teaspoon herbs, such as herbes d provence
freshly ground pepper

semi-coarse black sea salt
Andy Boy Cactus Pear Vinaigrette
fresh local greens
thin slices baguette

Pat salmon with olive oil and sprinkle with your choice of herbs, fresh or dried, and the pepper. Place in the smoker and cook over medium heat for about 20-25 minutes, or until salmon is done. Sprinkle with some black sea salt. Arrange over a bed of fresh greens, gently drizzle with the vinaigrette and serve with thin slices of bread. YUM!
