Chicken, Radishes, and Shallots

1-2 free range organic chicken breasts
sprinkles of herbes d provence
1-2 tablespoons olive oil
1-2 shallots, sliced and diced
1-2 large red radishes, sliced and diced
1-2 teaspoons organic soy sauce
1-2 teaspoons honey (or Stonewall Kitchens Roasted Garlic Onion Jam)

Slice chicken breast into strips slightly at an angle. Sprinkle with herbs and set aside. In heavy bottomed skillet or saute pan, heat oil until hot (but not smoking hot!) and then cook diced onions and radishes several minutes. Add sliced chicken pieces and cook and stir several minutes, or until chicken is done. Sprinkle on the soy sauce and stir in the honey or jam. Serve with fresh romaine leaves or other nice green salad.
