Broccoli Rabe and Burgers

From Dorothy McNett's recipes at www.dorothymcnett.com. Season and cook your favorite meat burger along with some diced onions. When done to your liking, arrange the patty on top of a plateful of freshly snipped raw broccoli rabe, stems, leaves, and flowers! Drizzle a few drops of extra virgin olive oil over the greens, and then sprinkle everything with some semi-coarse sea salt such as black lava.

lean ground round
sprinkles of dried herbs or a good quality dry rub mix
1-2 slices onion, diced
1-2 tablespoons sweet wine such as port, marsala, etc.
1-2 fresh stalks broccoli rabe, cut into bite-sized pieces
semi-coarse sea salt (black lava or coral, etc)

Shape meat into desired sized patties and sprinkle liberally with seasonings. Heat heavy bottomed skillet over medium high heat. Cook burgers several minutes on each side, adding onion pieces. In meantime, cut broccoli rabe and totally cover the bottom of your dinner plate with the greens. When meat is done, drizzle into the hot pan a few tablespoons of desired wine or broth and let it sizzle and reduce a bit. Arrange patty over the bed of broccoli rabe, drizzle with the juices, sprinkle with the salt. Enjoy!
