Cactus Pear Cheese Sauce

From dorothy McNett's recipes at www.dorothymcnett.com. This fabulous cheese sauce features Andy Boy Cactus Pear Vinaigrette along with cheddar cheese. Try this poured over Cauliflower Broccoli Beehive, topped with a colorful tomato rose.

2 tablespoons extra virgin olive oil
2 tablespoons unbleached all purpose flour
3/4 cup half and half (or milk, if preferred)
1/4 cup Andy Boy Cactus Pear Vinaigrette
1/2 cup grated cheddar cheese
pinch of semi-coarse sea salt

In batter bowl, whisk together the olive oil and flour. Whisk in the half and half and then the vinaigrette. It will thicken due to the vinegar in the dressing which is causing the half and half to turn into sour cream a bit. Cook 45-60 seconds in the microwave. Whisk well. Cook 1 minute, whisk, adding one more minute if necessary to produce a smooth and thickened mixture. Blend in the cheese and stir until melted. Sprinkle in a bit of salt, and serve! I like to make a tomato rose to place on the top, or sprinkle liberally with freshly snipped parsley or other herbs.
