Mint Cream

From Dorothy McNett's recipes at According to Greek mythology, a lovely nymph named Mentha (thus the name mint) was involved with Pluto. When Pluto's wife Persephone found out about the affair, she turned Mentha into an aromatic herb.....and now the power of food!

1/2 cup heavy whipping cream (organic Clover Farms,for instance)
4-6 fresh mint leaves

Whip the cream just to soft peaks. With kitchen shears, snip the fresh mint leaves finely and gently stir them into the cream.
Pile the mixture into small little glasses or cups, and freeze several hours. Serve as an addition to a fruit or chocolate dessert, or just enjoy it as it is. Very refreshing!
