Tuna and Garlic Sandwiches

From Dorothy McNett's recipes at www.dorothymcnett.com. Not just another tuna salad sandwich when made with freshly seared tuna and your own homemade bread.

1-2 pieces fresh tuna, about 1 to 1/2 inches thick
drizzles of olive oil
3-4 garlic cloves, finely minced
3-4 fresh chives, finely minced
freshly ground peppercorns
sea salt, as desired

1-2 ribs of celery, finely diced
a couple of dried apricots, dried apples, or raisins, diced
mayonnaise (see recipe for Mayonnaise So Simple)

freshly baked bread, or as available
local fresh greens

Rub each tuna piece with a few drizzles of olive oil and then pat the minced garlic and chives so that it sticks to the surface. Sprinkle with pepper. Heat a nice heavy bottomed skillet or saute pan for about 30 seconds, and then drizzle in a bit of oil. When pan is nice and hot (but not smoking hot), add the tuna. Cook 1-2 minutes on each side. Remove to plate and allow to cool. To assemble the sandwiches, break up the tuna and sprinkle with a bit of sea salt. Stir in the celery, diced dried fruits of choice and just enough mayonnaise to hold it together. Spread a bit more mayo over each bread slice and then assemble using fresh greens as desired.
