Ham Sauce for serving with Baked Ham, etc.

From Dorothy McNett's recipes at www.dorothymcnett.com. This wonderful fruity sauce can be served with cheeses, on cabbage salads, and as a great sauce for baked ham or other roasts.

2 mangos, peeled and pureed or very finely chopped
1 medium onion, finely diced
2-3 cloves garlic, finely diced
1/2 cup crushed pineapple
1/2 cup tomato sauce, or diced fresh tomatoes
1/4 cup vinegar
1 teaspoon molasses or honey
1 tablespoon chili powder (mild or hot, you decide!)
1/2 teaspoon sea salt
1/2 teaspoon cumin
2 tablespoons Hoisin sauce
1 teaspoon dry mustard

Combine all ingredients and simmer on low heat for about 30 minutes, to blend flavors and to thicken slightly. Taste and correct seasonings, as desired. Serve warm or cold as a side sauce for meat and chicken dishes.
