Apple and Cheese Salad

From Dorothy McNett's recipes at

1 apple, sliced
3 red radishes, sliced
small wedge of Cheddar or Swiss cheese
1/4 cup extra virgin olive oil
zest and juice of a lemon or orange
1/2 teaspoon raw sugar (or honey)
1/4 - 1/2 teaspoon semi-coarse sea salt
freshly ground peppercorns
baby greens or other nice dark green lettuce

Wash the apple, do not peel it. Cut in half and remove the core and seeds. Slice apple and radishes into bite sized pieces and place in a beautiful salad bowl. Cut the cheese into thin stick shapes and add to the bowl. In a small glass measuring cup, whisk the oil, zest, juice, sugar or honey, salt and pepper and drizzle it over the apple, radish and cheese mixture. Toss in the baby greens, mixing but not to crush the leaves. Serve!
