Cheese Salad with Radishes

2 apples (or pears), sliced
6-8 radishes, sliced
1/2 pound provolone or other semi-firm cheese
1/4 cup extra virgin olive oil
zest and juice of a lemon or orange
1/2 teaspoon crystalline brown sugar (or honey)
1/4 - 1/2 teaspoon semi-coarse sea salt
freshly ground peppercorns

Slice apples and radishes and place in a beautiful salad bowl or platter. Cut the cheese into matchstick sized pieces and add to the bowl. In small glass measuring cup, whisk the oil, zest, juice and sugar or honey. Whisk in the salt and pepper and drizzle it over the apple, radish and cheese mixture. Garnish with fresh herbs or baby greens, as desired.
