Hungarian Egg Noodles

From Dorothy McNett's recipes at www.dorothymcnett.com. Sometimes these are called String Noodles. How quick, easy and delicious! Great with Goulash.

2 whole eggs
3/4 cup all purpose unbleached flour
2-3 teaspoons water, as needed

6-8 cups boiling soup, broth, or water
salt and pepper, as needed and desired

Bring the soup or broth or water to a boil in a large stock pan. In meantime, in batter bowl whisk the eggs well and then whisk in the flour. The mixture will be fairly thick and it should drip slowly from a fork into long strips. If too thick, add a little water to get it just right. When liquid is rapidly boiling, drizzle the batter into the pan in as long strips as possible. Cook about 1-2 minutes. Drain and serve, adding salt and pepper as needed.
