Andy Boy Veggie and Bay Shrimp Salad

From Dorothy McNett's recipes at Use a variety of raw or cooked Andy Boy vegetables along with salad greens in a beautiful salad bowl. Make the dressing, toss and serve!

fresh vegetables, as desired
fresh greens, as desired

1 egg
1/2 teaspoon semi-coarse sea salt
1 teaspoon dry mustard
2 tablespoons fresh chives or green onions, chopped
2 tablespoons fresh parsley
1 1/2 teaspoons fresh or dried tarragon
zest and juice of one lime or lemon
1/2 cup extra virgin olive oil

1 cup sour cream of yogurt
1/8 teaspoon cayenne or other dried red pepper
few grindings of white pepper
1 1/2 cups cooked baby shrimp

Prepare vegetables, as desired, and place in salad bowl. In food processor with steel chopping blade in place, process the egg, salt, mustard, chives, parsley, tarragon and zest and juice of the lemon or lime to mix completely. With motor running, slowly pour the oil in a steady stream until it turns into a creamy mixture. Remove to a bowl, blend in the sour cream cayenne and pepper. Fold in the shrimp. Toss into the vegetables and serve.
