Sablefish or Halibut with Mushrooms

From Dorothy McNett's recipes at

1-2 tablespoons olive oil
1 pound fresh mushrooms, thickly sliced
2-3 cloves garlic, sliced or chopped
3-4 green onions, sliced
1/2 teaspoon fine sea salt
1/4 - 1/2 teaspoon freshly ground peppercorns
1 - 1/2 pounds sablefish or halibut steak, about 3/4 - 1 inch thick

3-4 tablespoons cream or other liquid, as desired, for sauce
1-2 green onions, sliced for garnish

Preheat oven to 450 degrees. Place heavy bottomed saute pan on stove top, heat about 30 seconds and then add the oil, keeping heat at medium to medium high so as not to cause the oil to start smoking. Add the mushrooms, garlic and green onions. Cook and stir several minutes, or until the mushrooms start to brown and begin to release their juices back into the pan. In meantime, sprinkle the fish with the salt and pepper. Arrange on top of the mushrooms. Bake about 10-12 minutes. Serve as is, or if you wish to make a creamy sauce, remove the fish to serving platter. Place pan on burner and bring to a simmer, adding the cream. Cook and stir several minutes to thicken and then drizzle over the fish. Garnish with sliced green onions and serve!
