Chicken Chow Mein

From Dorothy McNett's recipes at www.dorothymcnett.com. Simply a stir fried chicken dish served as a main dish with salad greens. The crispy chow mein noodles can be purchased in the Asian section of your market.

2-3 skinned and boned chicken breasts or thighs
sprinkles of semi coarse sea salt
freshly ground pepper
2-3 tablespoons corn or peanut oil
3-4 cloves garlic
1-2 stalks celery
1 small knob ginger root

1/4 cup soy sauce
1/2 cup chicken broth
1 1/2 tablespoons cornstarch
1 tablespoon sherry or sweet white wine

1/2 cup cashews
salad greens, as desired
crispy chow mein noodles

Cut the chicken into bite-sized evenly shaped cubes or slivers. Sprinkle with salt and pepper. Cut the celery into same size shapes as the chicken. Dice the garlic and ginger. Heat wok, adding oil. When nice and hot, add the chicken pieces and stir-fry several minutes until lightly browned and done. Remove to a bowl. Add the garlic, celery and ginger to hot pan, adding a bit more oil if necessary. Stir-fry 2-3 minutes. In meantime, combine the soy sauce, broth, cornstarch and sherry in glass measuring cup, whisking well. Pour into the wok with the vegetables, add the chicken. Cook and stir just until the sauce thickens and turns transparent. Add the cashews. Pour into a beautiful bowl and toss in the chow mein noodles. Serve on salad greens.
