Yam and Broccoli Rabe Salad

From Dorothy McNett's recipes at www.dorothymcnett.com. This is a wonderful blending of many flavors, making a delicious salad!

1-2 yams or sweet potatoes
1 bunch broccoli rabe
2-3 green onions
1-2 tablespoons diced sweet pickles
1 cup gouda or Swiss cheese, coarsely grated

1/2 cup mayonnaise
2 teaspoons balsamic vinegar, at least 10 years aged
1 teaspoon honey
1/2 teaspoon semi-coarse sea salt
several grindings of pepper
romaine or other greens for serving

Scrub and peel the potatoes, if necessary. Cut into small chunks and put into a glass or ceramic bowl and cover with lid or a plate. Microwave on high 3-4 minutes or until tender but not over cooked. Dump into a beautiful salad bowl. Slice the broccoli rabe into small pieces and place in same casserole, cover, and microwave 3-4 minutes. Dump into the salad bowl. Allow to cool for a few minutes, then add the slivered green onions, diced pickles, and grated cheese. In glass measuring cup whisk the mayonnaise, balsamic, honey, salt and pepper. Toss into the vegetables. Serve over a bed of greens, or toss the torn greens into the salad. A few more sprinkles of the semi-coarse sea salt on the top is also wonderful!
