Fennel and Celery Salsa

From Dorothy McNett's recipes at www.dorothymcnett.com. Serve this wonderful combination of flavors alongside any grilled fish, prawns, chicken, beef or lamb. It is especially tasty with grilled portobella mushrooms.

3 ribs celery, diced
2-3 ribs of fennel, diced
1/2 cup diced onion (yellow or white)
1/2 cup finely sliced green onion
1 jalapeno pepper, seeded and finely diced
1/2 teaspoon fine sea salt
zest of 1 lime
juice of the lime
1 teaspoon crystalline brown sugar
1 banana, sliced and diced

Chop and dice the vegetables, using a sharp chef knife or food processor. Pour into a beautiful serving bowl, add salt, zest, juice, sugar and finally the diced banana. Toss, taste, adjust seasonings as desired and serve!
